Description

Like those you buy in the grocery store but better! Homemade ice cream sandwiches are easy to make and easy to customize.

Ingredients

  • 4 cups Ice Cream (any Flavour, Slightly Softened)
  • ½ cups Butter Or Margarine
  • ½ cups White Sugar
  • 1 whole Egg (large)
  • 1 teaspoon Vanilla Extract
  • ½ cups White All-purpose Flour
  • ¼ cups Unsweetened Cocoa
  • ¼ teaspoons Salt

Preparation

1. Preheat oven to 350ºF and take ice cream out of the freezer to soften.
2. Whisk together melted butter and white sugar.
3. Whisk in egg and vanilla.
4. Whisk in flour, cocoa and salt until batter is smooth.
5. Spread dough in a 10×15 inch pan with sides lined with parchment paper. Leave an overhang of a couple of inches at each of the shorter edges of the pan.
6. Bake for 10 minutes or until the edges start to pull away at the sides.
7. Let cool.
8. Using parchment paper, lift the cookie out of the pan. Use a pizza cutter to cut the cookie in half crosswise.
9. Place one half back into the pan and spoon over softened ice cream. Top with the remaining cookie half.
10. Wrap tightly in plastic wrap and chill for 2 hours or overnight.
11. When chilled, remove from freezer and cut into 8 pieces, Enjoy!
