Description

Two vanilla cookies filled with a cherry marshmallow cream and drenched in chocolate.

Ingredients

  • FOR THE COOKIES:
  • 1 cup Butter, Softened
  • ½ cups Brown Sugar
  • ½ cups Sugar
  • 1  Egg
  • 1 teaspoon Vanilla
  • 1 teaspoon Baking Powder
  • 1 pinch Salt
  • 3 cups Flour
  • FOR THE MARSHMALLOW CREAM:
  • ½ cups Shortening
  • ¼ cups Butter
  • ½ cups Marshmallow Fluff
  • 1 Tablespoon Cherry Juice
  • ½ cups Cherries, Chopped
  • 2 Tablespoons Flour
  • 1 pinch Salt
  • 2-⅓ cups Powdered Sugar
  • FOR THE COATING:
  • 2 cups Chocolate Chips
  • 1 Tablespoon Shortening

Preparation

For the cookies:

Preheat oven to 400 F. In the large bowl of your stand mixer, cream the butter and sugars until fluffy. Beat in egg, vanilla, baking powder and salt. Slowly add the flour. The dough will be very stiff and you might need to stir in the last cup of flour by hand.

Divide the dough into 2 large balls. On a floured surface roll each dough ball to about 1/8″ thick. Use a 2 1/2 inch cookie cutter to cut out about 44 circles total.

Bake on a parchment paper-lined cookie sheet for 7 minutes. When done, remove from the oven and move the cookies to a wire rack to cool.

For the filling:

In a medium sized bowl, cream butter and shortening. Add Marshmallow Fluff, cherry juice, cherries, flour and salt and cream again. Slowly add the sugar until well blended.

Set out half of the cookies on a work surface. Spread the bottom of these cookies with cherry marshmallow cream and top it with another cookie. Repeat with all of the cookies and filling.

For the coating:

Put the chocolate into a microwave safe bowl. Heat it in the microwave for 30 seconds at a time. Stir every 30 seconds and continue heating until melted. Stir in shortening to thin it slightly.

Dip the cookie sandwiches in the melted chocolate using a fork to hold it and a spoon to cover the top. Carefully tap it on the side of the bowl so that the excess chocolate drips off and then place it on a sheet of wax paper to set up.

Makes about 22 filled cookies.
