Description

Buckeyes are a rich, candy-like, holiday staple. It’s basically a fudgy peanut butter ball dipped in decadent chocolate. A Christmas must.

Ingredients

  • ¾ cups Creamy Peanut Butter
  • 1 stick Unsalted Butter, Softened
  • 1 teaspoon Vanilla Extract
  • 3 cups Confectioners Sugar
  • 1 cup Milk Chocolate Chips
  • 1 cup Semisweet Chocolate Chips

Preparation

Beat together the peanut butter, butter, sugar, and vanilla in a large bowl until it forms a crumbly mixture.

Line a baking sheet with wax paper and roll peanut butter mixture into tablespoon-sized balls. The method to this is as follows: Take a handful of the mixture, squeeze it together with your hands, then roll it in a ball and place on the baking sheet.

Place one toothpick in the center of each ball. Place the baking sheet in the freezer about 30 minutes or until hardened.

Meanwhile, melt the chocolate in a double broiler, stirring often until smooth. Keep the double broiler on the burner, stirring often while dipping each peanut butter ball into it. You want to leave a little bit of peanut butter ball showing at the top to make them look like the authentic buckeyes.

Place back on the wax paper and repeat with the remaining peanut butter balls. Then set back in the freezer for 10 minutes until the chocolate has hardened.

Enjoy! Store them in an airtight container in the fridge if you have any leftovers.
