Description

I originally got the base recipe from Southern Living, but changed it quite a bit to suit my personal preference. It commends mad ravings at Christmas parties! Best part, you can make it ahead of time and freeze it!

Ingredients

  • 1 box (around 18 Oz. Box) White Cake Mix (or Better Yet, Make Your Own!)
  • 16 ounces, weight Sour Cream
  • ¼ cups Melted Butter
  • 1 teaspoon Allspice
  • 1 dash Nutmeg
  • 1 dash Apple Pie Spice
  • 2 whole Eggs
  • 1-¼ teaspoon Vanilla Extract
  • 1 dash Lemon Juice Or More To Taste
  • ½ teaspoons Almond Extract

  • FOR THE VANILLA BUTTERCREAM:
  • 8 ounces, weight Cream Cheese
  • 1 stick Butter
  • 1 box (1 Pound Box) Powdered Sugar
  • Lemon Juice To Taste
  • Vanilla Extract, To Taste
  • Milk, As Needed To Adjust Consistency

  • OPTIONAL GARNISHES:
  • Sugar Glitter, Fine Grit
  • Mixed Berries
  • Nuts
  • Fresh Mint Leaves

Preparation

Preheat oven to 350 degrees. Beat all ingredients (except buttercream and garnishes) together until smooth. Pour into round greased and floured cake pans (the number of layers you want will determine the size of the cake pans). Bake for around 20 minutes, or until a cake tester comes out clean. Allow to cool completely on wire racks. Refrigerate for at least one hour. (Or freeze until you are ready to use it!)

Beat buttercream ingredients together and spread evenly on the cake surface and between layers. Garnish if desired.
