Description

This Spiced Banana Bread is not only delicious, but also healthy. It is made from simple ingredients, such as almonds and oats and spiced with cinnamon, nutmeg and cardamom.

Ingredients

  • ⅔ cups Dates
  • 1 cup Oats
  • 1 cup Ground Almonds (see Note)
  • 2 teaspoons Baking Powder
  • ½ teaspoons Cardemom
  • 2 teaspoons Cinnamon
  • ½ teaspoons Nutmeg
  • ½ teaspoons Salt
  • 3  Bananas (peeled)
  • ¼ cups Milk Of Choice (I Used Almond Milk)

Preparation

Soak the dates in a bowl of water for 5-10 minutes. Preheat oven to 180 C.

Grind the oats using a blender, food processor or similar until it reaches a flour-like consistency. In a large bowl mix the oats with ground almonds, baking powder, cardemom, cinnamon, nutmeg and salt.

Drain the dates and mash them together with the bananas using the back of a fork. Mix the mashed dates and bananas with the milk before adding them to the dry ingredients. Thoroughly mix to combine.

Grease a standard size bread tin and pour the batter into it. Spread it out evenly and bake for 40-45 minutes. When done, the Spiced Banana Bread will feel slightly firm and a toothpick should come out clean when inserted into the middle. Allow to cool down before serving.

Store in an airtight container.

Note: If you do not have ground almonds, simply use a blender, food processor or similar to grind whole almonds. The consistency should be very similar to regular flour. Measure after grinding.

This sounds so delicious and I’m certainly going to make it. I wonder the quantity of dates… is it 2/3 cups packed lightly or do you have a weight for them?
