Preheat oven to 350ºF. Line baking sheet with parchment paper or Silpat; set aside.
In a large bowl, add coconut oil, applesauce, maple syrup and vanilla extract. Mix until combined. Add oats, baking soda, baking powder and salt; mix until combined. Fold in chocolate.
Take a teaspoon size of batter and place on cookie sheet, about 2″ apart. The cookies do not spread.
Bake for 10-12 minutes or until bottom is lightly golden. Let them rest on the baking sheet for about 2 minutes then cool on a baking rack.
Note: If you need the cookies to be gluten-free, be sure to use certified gluten-free oats.
