Description

Chewy, indulgent, and super fudgy Healthy No-Bake Brownies are made in just 5 minutes using simple raw ingredients! Paleo, vegan, gluten-free, and refined-sugar-free.

Ingredients

  • 2 cups Raw Cashews
  • ½ cups Cacao
  • Pinch Of Salt
  • 1-½ cup Mejdool Dates, Pitted
  • ¾ cups Prunes, Pitted
  • 1 Tablespoon Coconut Oil, Melted
  • 1 teaspoon Vanilla
  • FOR THE GANACHE:
  • 3 Tablespoons Coconut Oil, Melted
  • ½ cups Cacao
  • 4 Tablespoons Maple Syrup
  • Flaked Sea Salt And Cacao Nibs, For Garnish

Preparation

Line an 8 x 8-inch baking pan with parchment paper and set aside.

Add cashews, cacao, and salt in a food processor and process until fine. Add dates, prunes, melted coconut oil, and vanilla. Process until smooth.

Press mixture into prepared pan and place in freezer for 20–30 minutes.

While brownies are chilling, make ganache by combining melted coconut oil, cacao, and maple syrup. Whisk until smooth.

Pour ganache over chilled brownies and spread into an even layer. Place brownies in refrigerator for 5–10 minutes, or until ganache has set. Sprinkle brownies with flaked sea salt and cacao nibs. Cut into squares and enjoy!

Store leftover brownies in refrigerator for up to 1 week or in freezer for up to 1 month.
