These tasty oatmeal chocolate chip cookies are made healthier by using olive oil instead of butter.
Preheat oven to 375ºF.
With an electric mixer, beat together the olive oil, brown sugar, and egg until fluffy. Add the remaining ingredients and beat until well mixed.
Use a medium sized (approximately 2 tablespoons in size) cookie scoop to place cookies onto a parchment covered cookie sheet. Bake for 8-10 minutes, or until golden brown around the edges. Makes about a dozen cookies.
