Description

These healthy chocolate chip almond coconut bars are made with a secret ingredient: chickpeas! They are a delicious, guilt-free treat to help satisfy your sweet tooth.

Ingredients

  • 15 ounces, weight Chickpeas, Rinsed And Drained
  • ⅓ cups Creamy Almond Butter
  • ¼ cups Almond Meal
  • ¼ cups Coconut Sugar
  • 1 teaspoon Vanilla Extract
  • ½ teaspoons Salt
  • ¼ teaspoons Baking Powder
  • ¼ cups Roasted Almonds, Roughly Chopped
  • ½ cups Dark Chocolate Chips (vegan, If Needed), Plus More For Sprinkling On Top
  • ½ cups Unsweetened Coconut Flakes, Plus More For Sprinkling On Top
  • Sea Salt For Sprinkling On Top

Preparation

Preheat oven to 350ºF. Grease an 8×8 baking pan and line with parchment paper.

Add chickpeas, almond butter, almond meal, coconut sugar, vanilla, salt, and baking powder into the bowl of a food processor and process until smooth, about 2 minutes. Add chopped almonds, dark chocolate chips, and coconut flakes and pulse a few times until everything is combined.

Spread mixture into the prepared pan, sprinkle with chocolate chips, coconut flakes, and sea salt, then bake for 25 minutes. Let cool completely before slicing.

These will last a few days in the refrigerator and a few months in the freezer.

Note: The coconut sugar can be replaced with brown sugar or honey.
