These are made with whole wheat flour. I used xylitol for the sugar part (you don’t have to) and I used sugar-free chocolate, too. But most importantly, they are delicious!
Heat oven to 350ºF. In your food processor, put oats and nuts and process until ground. In a small bowl combine the dry ingredients, then add in the nut and oat mixture. Stir until combined. In another bowl, combine butter, sugar, egg, and vanilla and add to the dry ingredients. Mix until combined, then stir in chocolate chips. I made large cookies so I put golf ball-sized dough balls on my baking sheet, but you could definitely make smaller ones and get more cookies. Bake for 10 minutes and enjoy!
