Description

Healthy and delicious! Try them as an afternoon snack or a light dessert with a cup of coffee! Try mixing in mini chocolate chips, nuts, or pumpkin seeds!

Ingredients

  • 1-½ cup Old Fashioned Oats
  • 1 cup Flour
  • ¼ cups Almond Meal (if You Don't Have This, Just Add The Same Amount Of Additional Flour)
  • ¼ cups Flax Seed Meal
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • 2 teaspoons Pumpkin Pie Spice
  • 6 Tablespoons Canola Oil
  • ¼ cups Honey
  • ¼ cups Brown Sugar
  • 1 cup Canned Pumpkin
  • 1 whole Egg
  • 2 teaspoons Vanilla

Preparation

Preheat oven to 350ºF and line 2 cookie sheets with parchment paper or silicone baking mats.

In a medium bowl, combine oats, flour, almond meal, flax seed meal, baking powder, salt, and pumpkin pie spice.

In a large bowl whisk together oil, honey, sugar, pumpkin, egg, and vanilla. Once smooth, stir in oat mixture and stir just until combined.

Drop by rounded tablespoons onto baking sheets and flatten lightly with a floured fork. Bake for 15 minutes or until bottoms are lightly browned. Let sit for 2 minutes then move to a cooling rack. Store in an airtight container.
