Description

Packed with fiber and protein, these balls boast faint hints of peanut butter, chips of chocolate, and an oaty flavor that make them irresistible!

Ingredients

  • ½ cups Nuts, Whole (I Used Walnuts, But You Can Use Any)
  • ½ cups Old Fashioned Oats
  • ½ cups Whole Wheat (or Whole Wheat Pastry) Flour
  • ½ teaspoons Salt
  • 3 Tablespoons Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Raw Honey, Or More To Taste
  • ¼ cups Peanut Butter Or Other Nut Butter Of Choice
  • 3 Tablespoons Almond Or Regular Milk, Or Enough To Make A Slightly Sticky Dough
  • ½ cups Chocolate Chips, Chopped Coarsely

Preparation

You may toast the nuts or leave them untoasted. To toast, place in a 350ºF oven for 8 minutes or until fragrant. Let cool.

In a food processor, combine nuts, oats, whole wheat flour, salt, and brown sugar. Process until there are no longer any chunks of nuts and oats are fully broken down. Transfer to a bowl and add vanilla, honey, peanut butter, and almond milk. The dough should be sticky; if it is not, add more milk. Remember, the oats will absorb liquid in just a few minutes!

Once everything is combined, add the chocolate chips and mix until thoroughly incorporated. If dough is too sticky to shape, stick it in the fridge for about 1/2 hour. When ready, form dough into tablespoon-sized balls and refrigerate or freeze. Enjoy!
