A healthier version of the coconut macaroon. Very quick and easy recipe!
1. In a small bowl, combine the coconut, sugar, flour and salt. Stir in egg whites and vanilla; mix well.
2. Drop by rounded tablespoonfuls onto greased baking sheets. Bake at 325°F for 18-20 minutes or until golden brown. Cool on a wire rack.
Makes about 12 to 15 macaroons.
