Description

Pumpkin, oatmeal, cranberry, chocolate, pecan – I call it a harvest cookie. It’s quite a mouthful of cookies.

Ingredients

  • 1-¼ cup All-purpose Flour
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • 2 cups Oats
  • 2 whole Large Eggs
  • ¼ teaspoons Salt
  • 1 teaspoon Vanilla
  • 1 cup Pumpkin Puree
  • 2 sticks Butter, Melted
  • 2 Tablespoons Vegetable Oil
  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar (light Or Dark)
  • ½ cups Cranberries
  • ½ cups Pecans, Chopped
  • ½ cups Chocolate Chips, Bittersweet Or Milk

Preparation

Preheat oven to 350 degrees F.

Mix flour, baking powder, baking soda, and oats in a medium bowl. Set aside.

Beat eggs, salt and vanilla in a small bowl. Set aside.

Mix pumpkin, butter, oil and sugars in a large bowl. Stir in egg mixture until smooth. Stir in flour mixture and combine. Add the cranberries, pecans and chocolate mixing gently to incorporate throughout the cookie dough.

Drop teaspoonfuls of the dough onto a parchment-lined or greased floured cookie sheet. Bake for 16 to 18 minutes, or until golden brown around the edges. Remove from oven and let cool for a few minutes. Then transfer to a wire rack to cool completely. These are crunchy on the edges and chewy in the middle, the perfect cookie.

Heymom, I used dried cranberries and the cookies were delish.
The one thing i will change next time is to use softened butter instead of melted. The cookies came out flat like pancakes and i think it was due to the melted butter.

These cookies taste great, but flattened out in the oven. Per a suggestion, I used softened butter rather than melted. I also tried chilling the dough and that made no difference. If my cookies looked like the pic, I would give this recipe a five. :/

I made these cookies today and they were delish!! The only thing I didnt like is how they flattened out while baking..

We really like these cookies. I didn’t realize I didn’t have any chocolate chips, but had white chocolate so I used them, very good.
