Description

An unusual pairing makes a fabulous summer dessert!!

Ingredients

  • 3 whole Peaches Sliced In Half, With The Pit Removed
  • 9 teaspoons Balsamic Vinegar, Divided Use, Plus More For Garnish
  • 18 teaspoons Brown Sugar, Divided Use, Plus More For Garnish
  • 1 whole Prepared White Cake, 8″ Round Sliced In Half Horizontally And Cut Into 4″ Circles, 1 Cake Should Yield 6 Pieces
  • Balsamic Reduction, Store Bought, For Drizzle
  • Vanilla Ice Cream, Optional, For Serving

Preparation

Brush the cut side of each half peach with 1/2 teaspoons of balsamic vinegar and sprinkle on 1 teaspoon of brown sugar. Let them sit for 20 minutes.

Meanwhile heat up the BBQ grill to medium heat. Place peaches flat side down on the BBQ and brush 1/2 teaspoon balsamic vinegar on the rounded side of each peach then sprinkle with 1 teaspoon of brown sugar. When the peaches have nice grill marks on the bottom side turn them over and repeat the glaze by sprinkling 1/2 teaspoon balsamic vinegar and 1 teaspoon brown sugar to each half. When the peaches have nice grill marks on the other side, remove them from the grill.

Place the cake rounds on plates. Slice the peach halves in half and place the two slices of peach onto each cake. Place one scoop of vanilla ice cream on top of the peaches.

Drizzle with the balsamic reduction and garnish the plate with a little brown sugar. Wow, are these good.
