Description

My sweet cousin, Greg, and his mom, Aunt Reesie have graciously allowed me to share this family recipe – their take on chocolate chip cookies. Believe me, people, it is one of if not the best chocolate chippish cookie you’ll ever have. I can say that because I am a cook, not a baker and these cookies turn out perfect every single time!

Ingredients

  • 2 sticks Butter, Softened
  • 1 cup White Sugar
  • 1 cup Brown Sugar
  • 2 whole Eggs
  • 1 teaspoon Pure Vanilla Extract
  • 2 cups White Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 2-½ cups Oats - Blended Into A Flour
  • 1 package 6 Oz. Chopped Pecans
  • 1 package Chocolate Bark Chopped - 12 Oz

Preparation

Cream together softened butter, white and brown sugars, eggs and vanilla until fluffy.

Add the flour to the butter mixture a bit at a time, combining thoroughly. Then add the baking soda, baking powder and salt. Combine well.

Add the oatmeal (which you have whirled in a food processor to make into flour) a bit at a time until all the oatmeal is added.

Now stir in the chopped almond bark and pecans. Chill dough for about 30 minutes.

Drop by Tablespoons onto a parchment lined baking sheet and bake at 375F for no longer than 12 minutes. Do not over bake! Your oven temperature may vary so watch the cookies carefully – remove them from the oven as soon as they are brown around the edges. You’ll have a soft, delicious cookie! Enjoy!

** I have substituted chocolate chips as well as chocolate bark and each works equally well – you just get a different flavor depending on which you use!
