Remove rind and seeds from fruit. Cut fruit into cubes. Puree fruit in separate batches in a blender until liquefied. Adjust sweetness with sugar to taste, if desired.
Transfer liquid to shallow containers (8″ x 8″ baking pans work nicely for this); cover and freeze until firm.
Remove from freezer. Using a fork, scrape crystals of frozen fruit, transferring them to a zip top bag as they accumulate. Return crystals to the freezer quickly.
Assemble parfaits by scooping alternating flavors of granita into a pretty stemmed glass. Serve immediately and enjoy!
This is a good way to use up a bounty of fruit and the flavor combinations can be varied to your liking.
