Grandma Rose’s Fresh Apple Cake

Description
This was my grandmother’s recipe. A good cake to make when you are out of eggs. Very moist, does not need frosting. Excellent served warm with vanilla ice cream.
Ingredients
- 4 cups Apples, Peeled And Grated
- ½ cups Oil
- 2 cups Sugar
- 1 teaspoon Vanilla
- 2 cups Unsifted Flour
- 1 teaspoon Salt
- 1-½ teaspoon Baking Soda
- 2 teaspoons Cinnamon
- 1 cup Chopped Walnuts
Preparation
Mix together apples, oil, sugar and vanilla.
Sift dry ingredients together and add to apples. Fold in nuts.
Pour into greased 9 x 13 inch pan and bake at 350º for 1 hour or until done.
NOTES : A good cake to make when you are out of eggs. Very moist, does not need frosting. Excellent served warm with vanilla ice cream.

Oh wow! My mother-in-law gave me this recipe but hers includes eggs. It is so delicious. I make it all the time and will have to try this without eggs soon.
