Description

My favorite holiday cookie.

Ingredients

  • 2 cups Sugar
  • 1-½ cup Vegetable Oil
  • 2 whole Large Eggs
  • ½ cups Dark Molasses
  • 4 cups Flour
  • 4 teaspoons Baking Soda
  • 1 Tablespoon Ground Ginger
  • 2 Tablespoons Cinnamon
  • 1 teaspoon Salt
  • 8 ounces, weight White Chocolate Or White Almond Bark
  • Extra Sugar For Rolling Cookies

Preparation

Preheat oven to 350 degrees.

Mix all of the ingredients together (except white chocolate or almond bark). Roll into small balls. Dip in the extra sugar. Bake until golden brown, around 10-12 minutes. Allow to cool on a baking rack.

Dip half of the cookie into melted white chocolate or white almond bark. Place on waxed paper or parchment paper to cool and harden.

I owe you a great review. I’ve made these cookies so many times since finding this recipe a few months ago! I love that they’re dairy free. And i like them with or without the white chocolate. I’ve made them in a few different sizes and they turn out delicious every time. I especially like making little cookies and baking them for only 7-10 minutes. They’re chewy and perfect. Thanks for posting this recipe!

These cookies are light and crispy, just like I like them. The only thing I did that wasn’t in the recipe is smash each pre-cooked cookie ball with a glass before I baked them.

I accidentally forgot the eggs and didn’t realize it until I’d already baked half the batch! Since I’d already made half of them, I just added one egg. The egg made all the difference in their lightness and appearance. Imagine that!

I think the next time I make them, I’m going to add a tiny bit of cloves to give them even more of an Autumn bite! I’ll also remember to add the eggs up front. :)

Also – it made nearly 6 dozen for me. I’ll definitely be making these again!
