Description

This cake is so moist with just a hint of lemon. Refreshing!

Ingredients

  • 1 box Yellow Cake Mix
  • 1 box 3.5oz. Lemon Jello Pudding Mix
  • 4 whole Eggs
  • ½ cups Canola Oil
  • ½ cups Water
  • ¾ cups Orange Juice
  • 1 teaspoon Almond Extract
  • 1-½ cup Powdered Sugar
  • Juice Of 2 Lemons

Preparation

Preheat oven to 350 F.

Grease and flour a 13×9 pan.

Mix together the cake mix, jello, eggs, oil, water, OJ and almond extract. Beat on medium for 4 minutes. Pour into prepared pan.

Bake for 35 minutes, or until an inserted fork comes out clean.

Meanwhile, mix together the powdered sugar and juice of lemons to make the icing. Add more orange juice if needed.

Once cake is out of oven, pierce top of cake with fork to make holes for the icing to seep through. Pour icing over top and spread.

Let cool and dive in.
