Description

When I met my husband’s grandma – she brought her Oatmeal Caramelites. You see, she loved baking. I love baking. See how well we got along? Every family gathering I’ve ever been to? Oatmeal Caramelites!

This past year Grandma passed away. Guess what was on her counter? Yeah… you guessed it Oatmeal Caramelites. These are special – so I make them for my special person, Andy. Here’s to you Katherine – you were one classy lady!

Ingredients

  • 1 package (14 Oz. Size) Caramels, Unwrapped
  • 2 Tablespoons Milk
  • 1 cup Flour
  • ½ teaspoons Salt
  • ½ teaspoons Baking Soda
  • 1 cup Oats
  • ¾ cups Brown Sugar
  • ¾ cups Melted Butter
  • 1 cup Chocolate Chips
  • ½ cups Chopped Walnuts

Preparation

Melt caramels with the milk in a saucepan over low heat. When melted, remove from heat.

Mix flour, salt, baking soda, oats, brown sugar and butter together and press 3/4-ths of the dough into a 9 x 13 pan.

Bake at 350F for 10 minutes.

Remove from oven, sprinkle with chocolate chips and walnuts.

Then carefully spread the caramel mixture over the top. Sprinkle remaining crumbs over the top. Bake 15-20 minutes. Cool and cut into bars.

These are delicious! I’ve had the recipe two weeks and have made them twice. They’re particularly good for those who aren’t natural bakers like me. Easy, quick and wonderful. Plus I love the story erinraatjes shared with us. Thanks!
