Description

This jelly roll is truly a jelly filled roll… The first time I made it, I rolled it right down my lap! It’s a family recipe from my husband’s grandmother. You can use any kind of jam you like – maybe even some fresh fruit too.

Ingredients

  • 4 whole Egg Whites
  • ½ cups White Sugar
  • 4 whole Egg Yolks
  • ¼ cups White Sugar
  • ½ teaspoons Vanilla Extract
  • ¾ cups All-purpose Flour
  • ¼ teaspoons Salt
  • 1 teaspoon Baking Power
  • 1 jar Strawberry Jam, 12 Ounce Jar
  • Powdered Sugar, For Flouring Your Work Surface And For Sprinkling At The End

Preparation

What to do:
Beat egg whites until stiff, gradually add 1/2 cup sugar, beat until very stiff.

In separate bowl, beat yolks till thick and lemon colored. Gradually add 1/4 cup sugar and vanilla. Fold this mixture into the egg white mixture and add sifted dry ingredients (flour, salt and baking powder). Fold the dry ingredients into the wet, very carefully.

Prepare a parchment paper lined jelly roll pan. Pour your batter into the pan.

Bake at 375F for 12 minutes. Let cool slightly, turn out onto a powdered sugar covered cloth. Spread with 1 jar of strawberry jam and roll. Don’t drop it on the floor like I did! Sprinkle the top with more powdered sugar if desired. If dropped, sprinkle MORE powdered sugar on top. Serve!

Oh, you’re kidding! This looks GORGEOUS, and light enough to eat at a barbecue or other summer function. I love your step by step photos, and also your directions for how to handle a dropped jelly roll. (grin) I’ll definitely be giving this a bash.
