Description

My grandma used to make this for every holiday! I have never found anyone that makes it better (including me).

Ingredients

  • FOR THE FILLING:
  • 2 pounds Walnuts, Finely Ground
  • ¾ cups Whole Milk
  • ¾ cups Unsalted Butter
  • ¾ cups Plus 1 Teaspoon Honey

  • FOR THE DOUGH:
  • ¾ cups Whole Milk, Scalded
  • 1 Tablespoon Active Yeast
  • 2 Tablespoons Sugar
  • 4 cups Flour
  • 2 sticks Unsalted Butter, Chilled
  • 4 whole Egg Yolks, Unbeaten
  • 1 teaspoon Salt

Preparation

Nut mixture:
Warm the milk. Add honey, butter, and vanilla. Mix with the ground nuts.

To make the dough:
Add yeast into warm milk (scalded). Add sugar and let stand until bubbly. This will take about 5 minutes.

Cut cold butter into flour and salt until completely integrated. Make a well and drop the unbeaten egg yolks in, then the yeast mixture. Knead until the dough comes easily off your hand (this will not take more than a minute or two). Cover with a towel and allow to rise for 1 hour.

Divide dough into 4 equal parts. Working one part at a time, roll out on a lightly floured surface to a rectangular shape the thickness of a pie crust (between 1/8th and 1/4 inches). Spread on 1/4 of the nut mixture.

Roll up loosely (it should be flatter than it is round) and place seam side down on an ungreased cookie sheet. Cover and let rise for 1 to 1 1/2 hours.

Bake at 375F for 30-35 minutes.
