Description

I wanted to call these “pumpkin crack” bars, but decided that might not be appropriate. It would, however, be true.

Ingredients

  • 1 stick Butter
  • 1 whole Egg
  • 1 box (18 Oz. Size) Yellow Cake Mix
  • 1-½ cup Pure Pumpkin Puree, Divided
  • 1 stick Butter
  • 8 ounces, weight Cream Cheese
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 2-½ cups Powdered Sugar
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Nutmeg
  • ¼ teaspoons Allspice

Preparation

Preheat oven to 350ºF.

In a mixing bowl, blend together butter, egg, cake mix and 3/4 cup pumpkin puree. Once combined, spread mixture into a buttered 9×13 inch pan.

Cream together the butter and cream cheese. Add in egg. Blend until combined. Add in the remaining 3/4 cup pumpkin puree, vanilla, sugar, and spices. Pour batter over the top of the cake layer.

Bake in the preheated oven for about 35 minutes. This will result in a pretty gooey form. Bake for 40 minutes if you want it to be easier to cut and serve. Cake will be a light orange color and the top will still be somewhat gooey. Let cool, then serve.

I was expecting them to be more gooey but they werent. The flavor was pretty good though.
