Description

These peanut butter cookies taste absolutely divine and you would never be able to guess that they are flourless and gluten-free. They are creamy and delicious, definitely worth trying out.

Ingredients

  • 1 cup Creamy Peanut Butter
  • 1 cup Granulated Sugar
  • 1  Egg
  • 1 teaspoon Vanilla Extract
  • Coarse Sea Salt

Preparation

1. Preheat oven to 350ºF. Line a baking sheet with parchment paper and set aside.
2. Beat peanut butter, sugar, egg, and vanilla until fully incorporated. Spoon 1 tablespoon of mixture 1 inch apart on the baking sheet. Flatten with fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt over the top of the cookies
3. Bake for 10 minutes; they should still be soft to the touch when removed from oven. Let cool.

I have a similar recipe that I roll in a ball, make slight indentation, and then put small dab of jam in hole and bake as directed. Unbelievably delicious

Delicious! Great peanut flavor and the texture is pleasing, a little crispy on the outside and soft on the inside. The added flavor of the sea salt really brings out the peanut flavor. This recipe is a nice batch size too. I made one dozen cookies using 1 Tbsp of dough and 1 1/2 dozen using 1 tsp of dough.

These are the very 1st GF cookies I’ve made. Most GF cookie recipes that I come across have 1 million ingredients. So I was surprised when I saw this recipe. It is nothing short of delicious – I made these not even 15 minutes ago and they are almost all gone! Easy recipe, ingredients you always have in your pantry! Will make again and again! Thank you!
