Melt in your mouth, yummy and gluten free.
Heat oven to 350 F. Line 2 baking sheets with parchment paper/foil or a Silpat. Do not spray oil on the paper.
Combine the ingredients in a medium sized bowl and drop the dough in teaspoon-sized drops onto cookie sheets, placing them 1 1/2 inches apart. Bake for 9-11 minutes or until they turn golden. Remove from the oven and let them cool on the baking sheet for 5 minutes. The cookies need to set before handling them.
Per cookie: 33 calories; 2 grams fat; NO GLUTEN!
My friend who is on a gluten free diet is in love with these. She is once again able to eat cookies.
