Description

Glazed Key Lime Snack Cake.

Ingredients

  • FOR THE CAKE:
  • 1 package (3-oz Size) Lime Gelatin Mix
  • 3 Tablespoons Cold Water Or As Much As Needed To Make A Paste Out Of The Gelatin Powder
  • 1-½ cup Sugar
  • 2 cups Flour, Sifted
  • ½ teaspoons Salt
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • 5 whole Eggs
  • 1-⅓ cup Cooking Oil
  • ¾ cups Orange Juice
  • ½ teaspoons Vanilla Extract
  • ½ whole Lemon, Juiced
  • FOR THE GLAZE:
  • ⅓ cups Fresh Lime Juice
  • 1 cup Powdered Sugar

Preparation

Put the gelatin mix into a small bowl. Stir in a little bit of cold water (a few tablespoons or as needed to create a paste) and let it soak for 3-5 minutes. It will look like a thick paste.

Preheat oven to 350 F.

Combine sugar, flour, salt, baking powder, baking soda, and gelatin in a mixing bowl. Add eggs, oil, orange juice, vanilla and lemon juice. Mix until combined.

Pour batter into a greased 9″ x 13″ pan and bake at 350 F for 30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 15 minutes. While it’s cooling combine the glaze ingredients in a small bowl.

After 15 minutes, rick cake all over with a fork. Drizzle well with the lime glaze.
