Description

These Glazed Apple Oatmeal Cookies are filled with apple chunks and spices and topped with a deliciously sweet glaze.

Ingredients

  • 2-¾ cups Old Fashioned Oats
  • 1-¼ cup All-purpose Flour
  • 1-½ teaspoon Apple Pie Spice
  • ½ teaspoons Salt
  • ¼ teaspoons Baking Soda
  • ¾ cups Butter, Softened
  • 1-¼ cup Brown Sugar, Firmly Packed
  • 1  Egg
  • ¼ cups Plus 2 Tablespoons Milk
  • 2 teaspoons Vanilla Extract
  • 1 cup Diced Apple (for 1 Cup You'll Need About 2 Apples)
  • 1-½ cup Confectioners Sugar

Preparation

Preheat oven to 350 F. Line 2 baking trays with a Silpat mat or parchment paper. Set aside.

In a medium bowl, mix together the oats, flour, apple pie spice, salt and baking soda. Set aside.

In a large bowl, cream together the butter and brown sugar with a hand mixer until fluffy. Beat in egg, 1/4 cup milk and vanilla. Gently fold in apples and oat mixture until combined.

Drop spoonfuls onto the prepared baking trays spacing them two inches apart.

Bake for 15-18 minutes, or until golden brown. Remove from oven and let cookies cool for 5 minutes, then move cookies to wire racks to cool completely.

While cookies are cooling, prepare glaze. In a small bowl, whisk together the confectioners’ sugar and remaining 2 tablespoons milk. Drizzle over the cooled cookies. Enjoy!
