Description

Ginger lime lychee sorbet is right up my alley when it comes to summer time desserts. Cool, refreshing, tangy, and fun … you can’t go wrong!

Ingredients

  • 1 cup Water
  • 30  Lychees (peeled)
  • 1 piece (2-inch Size) Ginger, Peeled
  • 2  Limes, Juiced
  • 1 cup Sugar
  • Fresh Mint Leaves For Garnish (optional)

Preparation

Add water to a pot and set on medium heat on the stove. While that is heating, add lychees, ginger, and the juice of your limes to a blender and blend for 1 minute. Strain this mixture into a container to get rid of the pulp. Discard the pulp and set the liquid aside.

Add sugar to the hot water and stir. Wait for the sugar to fully dissolve, then take off the stove and pour the syrup into the container with the lychee juice. Stir.

Freeze for 3 hours, then take out, break apart, and blend into a slush. Put back into the fridge for another couple hours, then scoop and serve whenever you want. If desired, garnish with a mint leaf. Enjoy!
