Fill your home with the smell of freshly baked Ginger Cookies this Christmas . . .
Cream together the shortening and sugar, then add egg and molasses and mix to combine. Set aside.
In a separate bowl mix together flour, baking soda, cream of tartar, ginger, cinnamon and salt. Gradually add the dry ingredients into the wet.
Scoop dough with a 1″ cookie scoop and coat the tops of the dough by dipping the scoop into the extra 1/4 cup of sugar. Place on a baking sheet lined with a silpat or parchment paper and bake for 10 minutes at 350 degrees F.
