Description

Gelato al Kiwi (Kiwi Gelato) served in its own sweet little container. No spoon necessary.

Ingredients

  • 6 whole Egg Yolks
  • 1 cup Sugar Plus 2 Additional Tablespoons
  • 3 cups Whole Milk
  • 1 cup Heavy Whipping Cream
  • 1 teaspoon Pure Vanilla Extract
  • 4 whole Kiwi, Peeled

Preparation

Whisk your egg yolks and 1 cup of sugar together into the bowl of your mixer and mix together with your paddle attachment until light and creamy. Into a large sauce pan, add milk and heavy whipping cream and remaining 2 tablespoons sugar. Heat over medium heat, stirring frequently until sugar dissolves. Remove from heat. Add some of the warm milk/cream mixture to the egg yolk mixture into order to temper. GRADUALLY add the egg yolk mixture into the milk/cream mixture and stir well to combine. Return to medium heat and cook until mixture thickens/coats the back of your wooden spoon. Remove from heat and stir in vanilla extract. Allow mixture to cool in pan and then once pan is cool, place into the fridge to allow mixture to cool completely.

When you’re ready to make your gelato, place your peeled kiwi into a bowl and mix together with your immersion blender (food processor or blender) until creamy. Stir the kiwi mixture into the cream mixture and follow instructions on your gelato or ice cream maker!
