Description

So, what’s the deal with these brownies? The reason for using the black beans is not only to make these gluten-free, but also to add nutritional benefits (such as extra protein) as well as lowering the fat/calorie content. These brownies are also high in fiber, making them an ideal treat to munch on throughout the day. Don’t shy away from these just because they are made with beans. They are husband-approved.

Ingredients

  • 1 can (15 Oz. Can) Black Beans, Rinsed And Drained
  • 1 whole Small Banana
  • 1 cup Dates (loosely Packed)
  • 1 teaspoon Agave Nectar (optional, Just Makes It Sweeter)
  • ½ cups Milk Alternative (You Can Add A Bit More If Needed To Help Smooth Out The Batter)
  • ½ teaspoons Cinnamon
  • ½ teaspoons Instant Espresso Powder
  • ¼ teaspoons Sea Salt
  • ¼ cups Semi-Sweet Chocolate Chips

Preparation

In a blender or food processor, blend or process all ingredients (except for the chocolate chips) until completely smooth. Transfer to a lightly greased 8 x 8 dish and swirl the chocolate chips in. Bake at 350ºF for 30-35 minutes (or until slightly firm on the top). Let sit for 10 minutes, then cool in the fridge. These need to set, and the longer they are in the fridge, the better. Enjoy!

I wanted to love these. I really did. I think perhaps my palate isn’t open enough, but they were a little too…datey. Perhaps next time I’ll cut back on the dates and play with the spices a little more. Aside from that, they were quite tasty (and this, coming from someone who despises beans of any kind, but has resolved to be more open to trying things!) I couldn’t taste the beans at all = perfection!
