Description

One bowl chocolate fudge cake made with yogurt (with a chocolate fudge ripple)!

Ingredients

  • ½ cups Granulated Sugar
  • ½ teaspoons Vanilla Extract
  • ¼ cups Plain Greek Yogurt
  • 2 whole Large Eggs
  • ½ cups Flour
  • 5 Tablespoons Unsweetened Cocoa Powder
  • ¼ teaspoons Baking Soda
  • 1 pinch Salt
  • ¼ teaspoons Instant Espresso Powder
  • ½ cups Semisweet Chocolate Chips

Preparation

Preheat the oven to 350 F and lightly spray a 6″ round cake pan with cooking spray.

In a medium bowl, whisk together the sugar, vanilla, yogurt and eggs. Whisk very well. On top of the sugar mixture, add the flour, cocoa, baking soda, and salt. Whisk until combined. Finally, stir in the espresso powder and chocolate chips.

Scrape the batter into the prepared pan, smooth the top and bake on a small baking sheet for 23-25 minutes. A toothpick inserted in the center will have wet chocolate on it, but the top of the cake will appear dry and the edges will start to pull away from the pan. Remove from oven. Let it cool for 5 minutes, and then carefully tip onto a serving plate.
