I don’t know what to call this. It is a treat my mom made for me many times growing up. It is light, fluffy, and filling. It also has fruit, so it’s probably good for you!

Ingredients

  • 24 ounces, weight Cottage Cheese (fat Free Works Nice)
  • 8 ounces, weight Crushed Pineapple (or Other Fruit)
  • 3 ounces, weight Orange Jell-O Mix (sugar Free Or Otherwise)
  • 8 ounces, weight Cool Whip Or Generic Equivalent - Lite Works Best

Preparation

Step 1) Combine everything into a big bowl and mix.
Step 2) Eat.
Step 3) Ok, maybe put it in the fridge for a couple of hours before serving.
Step 4) Eat.

I’ve been trying to lose weight recently – mostly by going to the gym. My girlfriend is trying to do the same by exercise and dieting. Which means I am on a diet too. Yay. Anyway, I calculated the caloric content of this dish a few different ways – based entirely on the ingredients I used.

24 ounces 1% Milkfat cottage cheese: 540 calories
8 ounces lite Cool Whip: 500 calories
8 ounces crushed pineapple: 140 calories
3 ounces orange Jell-O mix: 320 calories

Total mixture? 1500 calories! Wow! But I split that into 10 servings – 150 each. Not too bad. There are a few things you can do to drop this even further, using the following ingredients:

Non-fat cottage cheese: 360
Fat-free Cool Whip: 300
Sugar free Jell-O: 80
Crushed pineapple: 140

Now we’re down to 880! 88 calories per serving. I don’t know how good it will be, but I can’t imagine it will taste bad.
