Description

A friend shared this recipe with me. The crust and glaze are so yummy! Way better than the standard sugar cookie crust!

Ingredients

  • Crust
  • ½ cups Powdered Sugar
  • ¾ cups Cold Butter (not Softened)
  • 1-½ cup Flour
  • * * * * * *
  • Topping
  • 8 ounces, weight Cream Cheese
  • ½ cups Powdered Sugar
  • 1 teaspoon Vanilla
  • Squirt Of Lemon Juice
  • Fruit (Kiwi, Grapes, Pineapple, Mandarin Oranges, Etc.)
  • * * * * * *
  • GLAZE
  • 2-½ Tablespoons Cornstarch
  • 1 cup Pineapple Juice
  • ¾ cups Sugar
  • 1 Tablespoon Lemon Juice

Preparation

Crust:

Mix all ingredients together and pat into a round pan. Bake at 350F for 10 to 12 minutes until light brown. Cool.

Topping:

Cream together the cream cheese, powdered sugar, vanilla and lemon juice. Spread on the cooled crust. Decorate the top with fruit pieces.

Glaze:

Combine all ingredients and cook until thickened. Pour over the fruit while the glaze is still warm.

Refrigerate.

For a jelly roll-sized fruit pizza, double this recipe.

I made a double recipe for a party (two pizzas) and came back with less than a quarter of one pizza–and it wasn’t a big party! I also had several people ask for the recipe, and my 7 year-old daughter raved that this was the best thing I’ve ever made.

I made two changes. First, I only used a very small amount of glaze, probably less than a quarter of the amount called for in the recipe. Second–and this one is purely cosmetic–I piped a little bit of strawberry jam around the outside of the cream cheese. Looked like tomato sauce!

This one is definitely a keeper!
