Description

100% Fruit Gums. Healthy and delicious! My first recipe here, hope you like it!

Ingredients

  • 7 ounces, weight Water
  • ⅓ ounces, weight Agar-agar Powder
  • ½ pounds, ⅞ ounces, weight Fruit Puree Or Juice (fresh)
  • 5-⅓ ounces, weight Sugar
  • Granulated Sugar, Optional, For Rolling The Gums

Preparation

Heat the water in a saucepan. When it begins to boil, add the agar-agar and stir for 2 minutes until dissolved. Remove from the heat, and add the juice or fruit purée that has first been mixed with sugar. Put it back on the stove and heat for two more minutes, while stirring. Then remove from heat and pour the mixture into a mould (I used square – see photo), and let it cool and set for at least 1 hour. If you are going to sugar the gums, do it just before serving, because they tend to get wet when sugared.

They can be kept in the refrigerator (in an airtight container) for a week, but since they are made from fresh fruit, it is better not to store them.

Agar agar is a vegetarian substitute for gelatine, derived from algae.

In Spain it can be bought in big supermarkets, herborist shops and most online cooking shopes… Doing a search in google the first site appearing for you is Amazon http://www.amazon.com/Agar-Powder-4-oz/dp/B00015UC48 Hope this helps!
