Description

My mom used to make this cake for me when I was a little girl. The icing just melts right into the cake.

Ingredients

  • 2 cups Flour
  • 1-½ cup Sugar
  • 2 teaspoons Baking Soda
  • 1 dash Salt
  • 2 whole Eggs
  • 1 can Fruit Cocktail, Including Juice
  • 1 teaspoon Vanilla
  • ½ cups Brown Sugar
  • ½ cups Chopped Pecans
  • _____
  • FOR FROSTING:
  • 1-¼ cup Sugar
  • ¾ cups Evaporated Milk
  • 1-½ stick Butter

Preparation

Whisk the flour, 1 1/2 cups sugar, baking soda, and salt together. Add the wet ingredients. Stir till just moistened.

Pour into a greased 9×13 pan. Sprinkle the top of the cake with brown sugar and pecans. Bake at 350F for 40 minutes.

Boil frosting ingredients together for 2 minutes. Pour over the hot cake.

I just found my grandmother’s copy of this recipe last weekend. How cool. My dad loved fruit cocktail, especially in homemade ice cream that we kids that was ugh. But the cake was always delicious.

The best fruit cocktail cake I’ve ever had. Even my husband, who isn’t a cake fan, likes it. Moist and flavorful, the frosting really sets it apart. Making it again tonight!
