Description

The crust that is created on this fruit cobbler is to die for. Not stirring the batter as it enters the preheated pan creates an amazingly crunchy crust that everyone will be fighting over!

Ingredients

  • 1 stick Unsalted Butter
  • 1 cup Flour
  • 1 cup Sugar
  • 2 teaspoons Baking Powder
  • ¼ teaspoons Salt
  • ⅔ cups Milk, Room Temperature
  • 1 whole Egg, Beaten
  • _____
  • FOR THE FILLING:
  • 4 cups Cubed Rhubarb (peaches Or Cherries Too)
  • ¾ cups Sugar
  • 1 teaspoon Nutmeg
  • 1 Tablespoon Flour

Preparation

Melt butter in a 9 x 13 glass baking dish in a 350ºF oven. While butter melts, whisk together the flour, sugar, baking powder, and salt in a bowl. Stir in milk and egg.

Pour batter over the butter; do not stir. Combine ingredients for the filling. Pour filling over the batter; do not stir. Bake for 30–40 minutes until the sides are brown and crispy.

This was really yummy! I added a tsp. vanilla and grated orange peel, served with a dollop of fresh whipped cream and a scoop of vanilla ice-cream. DELICIOUS!
