Description

Tangy and creamy, this refreshing dessert is just the ticket after an indulgent meal. Or eaten straight out of the freezer whenever you need a cool ‘n creamy dessert fix!

Ingredients

  • 1-¾ cup Graham Cracker Crumbs
  • ¼ cups Melted Butter
  • ¼ cups Granulated Sugar
  • 1 pinch Salt
  • 1-¾ cup Powdered Sugar
  • 1 package 8oz Cream Cheese
  • 1 cup Freshly Squeezed Lime Juice
  • 1 can Sweetened, Condensed Milk - 14-ounce Can
  • 2 Tablespoons Lime Zest
  • 2 cups Whipping Cream
  • 4 Tablespoons Powdered (Confectioners) Sugar
  • 2 teaspoons Lime Zest (optional)
  • 1 whole Lime, Sliced Thin, For Garnishing

Preparation

Mix the graham cracker crumbs, butter, granulated sugar and salt together and pat into the bottom of a 9×13 pan. Place in the freezer for about 15 minutes.

Meanwhile, cream the powdered sugar and cream cheese together. Dollop over the frozen crust and spread with an offset spatula. Spread gently so as to not disturb the crumb crust underneath.

Mix the lime juice, condensed milk and zest together and whisk well. Pour over the cream cheese layer and then place in freezer for about 30 minutes.

In a chilled bowl, beat the heavy whipping cream until slightly thickened. Add in the 4 Tablespoons of powdered sugar and continue beating until nearly stiff, but not grainy.

Spread over the frozen lime mixture, garnish with limes and zest.

Freeze for about 2 hours, or until firm.
