Description

I’m not a coffee drinker, but I love these cookies. They have a unique taste and are super-easy to make. The original recipe called for using shortening, but I always use butter, and I usually leave out the nuts. Enjoy!

Ingredients

  • 1 cup Butter
  • 2 cups Brown Sugar
  • 2 whole Eggs
  • 1 cup Hot Coffee
  • 3 cups Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 1 cup Raisins
  • ½ cups Chopped Nuts (optional)

  • FOR THE ICING:
  • 2 cups Powdered Sugar
  • 2 Tablespoons Butter, Melted
  • 4 Tablespoons Hot Water

Preparation

Cream together butter and brown sugar, then add eggs and coffee and mix well. Mix flour, baking powder, baking soda and cinnamon together and add to the wet mixture. Add raisins (and nuts, if desired).

Pour batter into a large cookie sheet with sides (12″ x 18″) sprayed with Pam. Bake at 350 degrees for about 15 minutes. Frost with icing while warm. Then let cool and cut into bars approximately 1″ x 2″.

Icing:

Combine powdered sugar and butter. Add hot water as needed to create a glaze. Spoon over the top of the cookies and gently spread over the top. The glaze should be a thin layer.
