Description

If you have a few overripe bananas that need to be used, don’t wait to try this recipe!

Ingredients

  • FOR THE BARS:
  • ½ cups Butter, Softened
  • 2 cups Sugar
  • 3 whole Eggs
  • 3 whole Bananas
  • 1 teaspoon Vanilla Extract
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 pinch Salt
  • FOR THE FROSTING:
  • ¼ cups Butter, Softened
  • 4 ounces, weight Cream Cheese, Softened
  • 2-¼ cups Confectioners Sugar
  • 1 teaspoon Vanilla Extract

Preparation

1. In a mixing bowl, cream butter and sugar.
2. Beat in eggs, bananas and vanilla.
3. Combine the flour, baking soda and salt. Add to the creamed mixture and mix well.
4. Pour into a greased 15 x 10 x 1 inch baking pan.
5. Bake at 350ºF for 25 minutes or until bars test done.
6. Cool.
7. For the frosting, cream butter and cream cheese in a mixing bowl. Gradually add confectioners’ sugar and vanilla. Beat well. If you want it thicker, add a littler more confectioners’ sugar. Spread over the bars.

Was looking for something to use overripe bananas and take in to feed the coworkers. This got a thumbs up from everyone – boss even took two pieces! I had 4 bananas so I put them all in – no problem! Easy and a keeper! Thanks!

Made these yesterday…Yummy. I used 5 bananas because mine were small. My oven only needed to bake for 18 minutes. Thanks for a great recipe.

This is it! The best banana bread/cake/bar recipe I’ve tried. Sometimes I add walnuts, but it doesn’t need them. Great just as it is! The frosting is versatile and I’ve used it for many other applications. This will not disappoint. ENJOY!
