Description

Luscious fresh peaches topped with a sweet biscuit!

Ingredients

  • 5 cups Fresh Sliced Peaches
  • 1 Tablespoon Lemon Juice
  • 1 pinch Salt
  • 2 Tablespoons Quick Cooking Tapioca, Ground Fine
  • ½ cups Sugar
  • 1 cup Flour
  • ¼ teaspoons Salt
  • 1-½ teaspoon Baking Powder
  • ¼ cups Butter
  • 1 whole Egg
  • ¼ cups Cream Or Milk
  • 2 Tablespoons Sugar

Preparation

Preheat oven to 400 degrees.

Peel and slice peaches and gently toss with the next 4 ingredients. Place in a large casserole and set aside.

Mix the flour, salt, and baking powder. Cut in the butter and then mix with your hands until it resembles fine meal.

Place the casserole in the microwave and heat the peaches until they are hot.

Beat the egg and mix with the cream. Add to the dry ingredients and mix until just moist.

Drop by spoonfuls onto the top of the peaches and then sprinkle with sugar.

Bake for 25-30 minutes or until a tooth pick inserted in the biscuit comes out clean. Serve warm with vanilla ice cream or cream.

Made this tonight…. used a 9×13 glass dish for baking. I might increase the amount of batter the next time just because this amount didn’t quite cover as much as I wanted it to with this size dish. VERY tasty, especially over the recommended ice cream!

I chose this recipe because it used fresh peaches, and didn’t include any spices. It was very easy to make and was a big hit with the family. I didn’t have tapioca and used 2T of cornstarch instead and it worked out great. Definitely great with premium vanilla ice cream! My daughter had seconds, and my husband had thirds. Definitely recommended!

This is one fantastic cobbler! I made it last year with fresh peaches. I thought I had rated it then. I froze some peaches and decided to make this again so I’m really glad I could find it! This was wonderful – you will not regret making it!
