Description

I love this recipe, it’s a snap to pull together. Whatever kind of apples you have handy will work fine and you only need 2 of them!

Ingredients

  • 1-¾ cup Sugar
  • 3 whole Eggs
  • 1 cup Vegetable Oil
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 2 cups Flour
  • 1 teaspoon Cinnamon
  • 2 cups Peeled, Sliced Apples
  • 1 cup Walnuts, Chopped (optional)
  • Confectioners Sugar, For Dusting

Preparation

Preheat oven to 350 degrees (F). Spray a 9×13 pan with nonstick spray.

Beat sugar, eggs, and oil. Set aside.

Combine baking soda, salt, flour and cinnamon in a separate bowl (I never do this, I throw it all in the mixer, but I will share the recipe as it is written). Add dry mix to egg mix and beat well. Fold in apples and nuts.

Pour into pan and bake for about 45 minutes or until middle is cooked.

After it cool sprinkle with confectioner’s sugar for dusting.
Cut into squares and enjoy.

I must say that I am not a fan of anything with cooked fruit, that is until now. Not only is this recipe easy and quick, but so delicious. I will definitely make this again and again and again.
