Description

This recipe came out of my grandmother’s card file. I have made this cake with both pears and apples, and both have turned out delicious! This cake also lasts a long time and freezes well!

Ingredients

  • 1-½ cup Oil
  • 3 whole Eggs
  • 2 cups White Sugar
  • 2 teaspoons Vanilla
  • 3 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 3 cups Peeled, Diced Apples (You Can Use Pears)
  • 1 cup Nuts
  • 1 stick Butter Or Margarine
  • 1 cup Brown Sugar
  • ¼ cups Milk

Preparation

Preheat oven to 350 degrees. Cream together oil, eggs, white sugar, and vanilla. Mix together flour, soda, and salt in a separate bowl and then mix with the creamed mixture. Fold in apples and nuts. Pour into a tube pan and bake for 1 hour. About 5-10 minutes before cake is done, combine butter, brown sugar, and milk in a saucepan. Bring to a boil and boil for 2 1/2 minutes. Poke holes in the hot cake and pour the brown sugar mixture over the cake. Let the cake cool for 15 minutes, then invert onto a serving plate.

I made your wonderful cake this morning and it looked and smelled so yummy that I couldn’t wait for tonight so I had a giant piece for lunch. The brown sugar butter puts it over the top! The only thing I changed was I used 1 cup of raisins instead of the nuts, ( Husband loves raisins). Thanks for sharing!

Very good! I made it with pears (since I had over a dozen almost too ripe!) and I put the carmel sauce over the top instead of the bottom. I usually don’t use oil in my cakes and breads, I really prefer butter, but turned out great. I also thought about adding some spices like nutmeg and cinnamon, but I am glad I left it as is. The carmel is just what you need, nothing more. I also used pecans. It really is a great recipe. I will make it again for sure.
