Description

This is a recipe passed down to me from my great grandmother Pearl. I absolutely love this pie and I hope you do too!

Ingredients

  • 3 whole Eggs, Beaten
  • 1-½ cup Sugar
  • 1 cup Flaked Coconut
  • 1 stick Butter, Melted
  • 1 Tablespoon White Vinegar
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 1 whole 9" Uncooked Pie Shell

Preparation

Mix filling ingredients well and pour into the pie shell. Bake at 350F for 1 hour.

This is my new go to pie recipe! Incredibly easy. I prefer to serve it chilled with a dollop fresh whipped cream! I also use Maries Callendar’s ready made pie crust.

I made this at the last minute to take to a dinner party. I wasn’t able to leave the house because my wee one was sleeping and I didn’t have time to chill anything. So I decided to make this desert because I had all the ingredients and it said it was easy! Everyone thought it was delicious! The texture and flavor of this pie were amazing. I served it with a jar of whipped coconut cream and a jar of smahsed pistashios, chopped mint and toasted coconut chips/flakes, toasted lemon rind, toasted slithered crystalised ginger, so people could spoon it over themselves. I was AWESOME!

I made 2 of these pies for a neighborhood event, it was delicious. So delicious, I actually saw an elderly woman sneak 1/3 of one pie onto a peice of foil and into her purse. This is now one of my 2 most requested recipes. Thank you Grandmother Pearl!

Made this last night. I had read the reviews, so I knew to use only 1 cup of sugar. Total hit! We actually ate the entire pie!!!! Most DEFINETLY will make again. Reminded me of a coffee cake I make. LOVE LOVE LOVE!!!!!

This had a good flavor but was a bit too rich for our tastes. The texture could also be a bit creamier.
