Description

Delicious, soft peanut butter and chocolate chip cookies made with absolutely no flour! Use certified gluten-free oatmeal, and these cookies are gluten free!

Ingredients

  • 1 cup Peanut Butter
  • ¼ cups Butter
  • 1 cup Brown Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • ½ cups Rolled Oats
  • ½ teaspoons Salt
  • 1 teaspoon Baking Soda
  • ½ cups Chocolate Chips (I Like To Use 60% Cacao Chips)

Preparation

1) Preheat oven to 350°. Line a baking sheet with parchment paper.

2) Place the peanut butter, butter, and brown sugar in the bowl of a stand mixer and beat on medium speed until well blended, about 3 minutes. Add the eggs, one at a time, mixing well after each addition. Add the vanilla and mix.

3) In a small bowl, mix together the oats, salt, and baking soda. Add to the peanut butter mixture and stir well. Stir in the chocolate chips. The dough will be very soft and sticky.

4) Drop by spoonfuls onto the prepared baking sheet. Bake for 10-12 minutes or until lightly browned. Allow to cool on the pan for a few minutes before removing to a wire rack to cool completely.

Made these this afternoon and they were great. I subbed in some left over roasted (unsalted) crushed peanuts for the chocolate chips. Nutty delicious!

BTW, these were very good the first day…but even better the second…they reminded me of a bakery cookie. =)

I would like to try this with peanut butter chips! I’ve made some flourless pb cookie recipes before and they were gooey, these look a little crispier

This was the first time I was making flourless cookies — it was a little too soft and a little salty (?) so will leave them in the fridge for a while and see what happens.

Hi =) I decided this recipe would be fun since my MIL started eating gluten-free. These were actually very good! The texture was much softer than a regular (not gluten-free) chocolate chip cookie, so I let them cool on the baking sheet to firm up. The flavor was fantastic…everyone loved them…I wouldn’t feel bad serving these cookies to someone with gluten intolerance at all!! =) TFS this recipe!
