Description

These light and gooey treats are a family favorite for all occasions.

Ingredients

  • 1 box (18.25 Oz. Box) Yellow Cake Mix
  • 1-½ stick Unsalted Butter, Softened
  • 4 whole Eggs, Divided
  • 8 ounces, weight Softened Cream Cheese
  • 1-½ cup Confectioners Sugar
  • 1 cup Light Brown Sugar, Packed
  • 1 teaspoon Vanilla Extract

Preparation

Soften the cream cheese by leaving it out of the ice box for at least 4 hours. 8 hours works best.

Preheat oven to 325F degrees. Coat a 9×13 baking dish with nonstick spray or butter (I prefer Baker’s Joy spray). I also prefer a Pyrex dish to metal for this.

In your mixer, or by hand, slightly beat two eggs. Add cake mix and slowly pour in cooled, softened butter. If you’ve melted the butter, make sure to temper it as you add it to the mix so as not to cook your eggs! Mix thoroughly and spread in the bottom of your coated baking dish. It helps to dip your fingers in butter or water to evenly spread the mix.

Next, slightly beat the remaining two eggs in your mixer (or by hand) and add the softened cream cheese. Then add the powdered and light brown sugars and vanilla. Mix thoroughly. You may have specks of cream cheese floating about, but that’s okay! Pour on top of the first mixture and bake, uncovered, for 45-55 minutes. It should be lightly browned and a toothpick will come clean when inserted.

Let cool and cut into squares. Depending on the size that you cut, you should have 24-36 soft, gooey squares.
