Description

Fortune cookies with nutmeg and cinnamon.

Ingredients

  • ½ cups Sugar
  • ½ cups Plain Flour
  • 1 teaspoon Cornflour
  • 1 pinch Salt
  • ½ teaspoons Nutmeg
  • 1-½ teaspoon Cinnamon
  • 3 teaspoons Margarine
  • 1-½ teaspoon Vanilla Essence
  • 2 Tablespoons Water
  • 3 whole Egg Whites
  • 25 whole Fortunes, Written On Small Pieces Of Paper

Preparation

Preheat oven to 180C.

Sift together all of the dry ingredients in a mixing bowl. Set aside.

Melt margarine in the microwave, then mix it with the vanilla essence, water and all of the sifted dry ingredients.

In a separate large bowl beat egg whites till soft peaks form. Slowly fold dry mix into the egg whites to make a batter.

On a lined baking sheet place a tablespoon of batter and using the back of a spoon spread it to make a thin circle. Depending on how fast you are and how many people you have to help you can usually do 2 fortune cookies per person at a time. Wear gloves when folding cookies to prevent burning your fingers. And have fun!

Place the pan in the preheated oven for around 4-6 minutes until it is browned about 1 cm around the edges. Quickly flip it over, place the folded fortune just off the centre of the circle. Fold cookie in half and then fold over the rim of a glass or bowl to make fortune cookie shape and then place it in a muffin pan to set. Much like toffee it will harden as it cools.
