Description

Delicious, filled with jam empanadas that you’re going to get asked to make all the time!

Ingredients

  • 2 pounds, 3-⅓ ounces, weight All-purpose Flour
  • ½ teaspoons Salt
  • ½ cups Sugar
  • 1-½ teaspoon Baking Powder
  • 1 pound, 1-⅔ ounces, weight Shortening
  • 12 ounces, fluid Beer (Heineken)
  • 2 cups Jam
  • 1 cup Sugar
  • 1 Tablespoon Cinnamon

Preparation

Preheat oven to 350°F.

In a bowl add the flour, salt, sugar, baking powder and shortening, and cream together. Then add the beer a little at a time until the mixture starts forming a ball. Let it rest for about 15-20 minutes covered in plastic wrap.

Now roll out the dough so that you can cut circles out of it. Cut out whatever sized circles you prefer. Into the middle of each circle, add a little bit of jam (I used fig jam). Then fold the dough circle in half, press edges together and crimp the edges with a fork. Place the assembled pies in a Pyrex dish.

Bake the empanadas until golden, 15 to 20 minutes.

When done, remove them from the oven and immediately roll them in sugar and cinnamon.

Transfer to a wire rack and let cool. Serve warm or at room temperature.

You can fill them with any jam you want.
