Description

Quick rice pudding uses already cooked brown rice, almond milk and rice flour to thicken. Stevia is used for a very light sweetening. I like to add raisins (optional) for additional sweetness. I add flax seed (optional) for extra texture. Great with a little nutmeg or cinnamon for breakfast!

Ingredients

  • 2 cups Precooked Brown Rice
  • 2-¼ cups Unsweetened Almond Milk
  • 1 Tablespoon Rice Flour
  • 1 Tablespoon Flax Seed
  • 1 teaspoon Vanilla
  • 2 packages (Individual Packets) Stevia
  • ½ cups Raisins (optional)
  • Cinnamon And/Or Nutmeg, For Garnish (optional)

Preparation

Mix the rice (pre-cooked), almond milk, rice flour, flax seed (optional), vanilla and stevia in a saucepan over medium heat. Cook for 10-15 minutes until thoroughly heated, stirring occasionally to prevent burning at the bottom. The stevia provides a very mild sweetness; increase to 4 packets if you want the rice pudding to be sweeter.

Remove from heat and stir in raisins (optional). Place in the fridge overnight.

Serve warm or cold with a dash of cinnamon or nutmeg (or both) on top.
